Shoulder – also called the chuck. The beef shoulder is a large muscle group from which many cuts can be taken. Roasts are popular since this muscle is typically well-marbled and benefits from slow cooking. Some grilling cuts, such as the flat iron steak, come from the shoulder. Chuck cuts tend to be cheaper and can even be substituted to make “mock” filets.
